Southwestern cuisine incorporates a rainbow of cultural recipes and influences. Originally the cuisine developed from the native Americans whose tastes were greatly influenced by the changing seasons. This dependency on such items as dried beans, chiles and corn products formed the traditional southwestern foundation, on which the Spaniards and Mexicans later built upon to create an entirely new cuisine. Not to stay stagnant for long, this new cuisine was blended yet again, this time by the Europeans. The end result was a kaleidoscope of different dishes which drew upon various cultures and ingredients. Today, although still traditionally based, southwestern cuisine continues to evolve with the ever-changing demands put on it by the eating public.

    At Coyotes, emphasis is put on quality fresh ingredients in order to create healthy, robust dishes that appeal to a broad range of people. Traditionally based on dried chiles, southwest sauces are full flavored, without the use of rich butter and cream reductions. Fire roasted peppers create a smokiness, while roasted garlic and items such as sundried tomatoes add layers of flavor to tempt your palate. Crisp grilled vegetables are plentiful on our menu, as is the abundance of fresh salsa and fruit purees. Fresh pasta paired with home made stocks and sauces are a final addition to complete a diverse combination of southwestem tastes.
